Ingredients
Rolled oats – 1 ½ cups
Coconut jaggery powder – ¾ cup
Mixed nuts (almond, cashew, walnut) - ½ cup chopped
Seeds - pumpkin, chia, sesame - ¼ cup
Desiccated coconut – 2 tbsp
Honey or dates syrup – 2 tbsp (optional for extra binding)
Coconut oil or ghee – 2 tbsp
Vanilla essence – ½ tsp (optional)
Salt – a small pinch
To Make the Coconut Jaggery Syrup
In a pan, add coconut jaggery powder + 3 tbsp water.
Heat gently until it forms a sticky syrup.
Do not overcook, just melt and turn off.
How to Make Granola Bars Step-by-Step
Dry Roast
In a pan, dry roast oats, nuts, and seeds until aromatic, in about 3-4 minutes.
Turn off the heat and let it cool.
Mix everything
In a bowl, add roasted oats mix.
Add desiccated coconut, salt, and vanilla essence.
Pour in the coconut jaggery syrup + coconut oil.
Mix until everything is sticky and coated.
Setting the Bars
Line a tray with butter paper.
Transfer the mixture and press hard, using a flat spoon.
Refrigerate for 1–2 hours.
Cut into bars once firm.
Tips for the Best Granola Bars
Add peanut butter to create a richer, chewier texture.
If mixture feels dry, add a little honey or warm water.
It's important to press firmly so that the bars won't be crumbly.
Store in an airtight box for 10–12 days.
